Dear Secret Sisters
It has been a topsy turvy crazy slow January, at least for me, even slow in getting all secret sister names organized. I hope everyone is excited about their secret sister and able to do the extra names you were given. I have heard it has been a huge blessing already, even as it was only January!!! I also have heard such nice appreciations for being invited to the SS group. So stay with us everyone and have lots of courage and incentive to carry on.
Please feel free to leave your gifts on the little table as you enter the church. I saw a couple there last week and thought it was a good idea. use the mailboxes also. Or on the freezer in my porch!! i may not hear you when you come but leave a text or messenger note just in case and i can deliver your gifts and messages! thank you....
Here in this letter i will leave my thoughts for the month, a recipie or craft or something!!! or you can leave me something to put in also. For those of you who have computers this will be my method of contacting you, ever since COVID printer ink prices have rocketed so it seems this may be the way to go.

INSPIRATION for this month is....
I love the concept of 'hygge' the Danish word for hospitality. It epitomizes in so many ways what it means to live the quiet, simple life. Focusing on what you have been given and savoring each and every moment of it brings such joy. As believers, we live our lives not isolated, but in community, a call to pull others into our lives, to open our doors just as we are, and let friends just do life with us.
MORNING ROUTINES:
In the Morning when you rise, give me Jesus: set up a warm drink, light a candle, (i've always wanted to do that but haven't Yet!) open your Bible and invite him into your day, be captivated by His beauty and goodness. Take a picture of the sunrise as Valerie and I do quite a bit!!! Come as you are,...... it is that simple!!!
Next week is heart week!!! have your valentines ready and enjoy your day!

RECIPE: this was absolutely delicious, i have made it three times already. follow the ingredients, it really pays!!! one thing i did do different was add a bit of beet juice to the soup mix. it seemed to add to the flavor and color.
Persian red lentil soup with tahini, beetroot and fried mint
Ingredients
80 ml olive oil (1/3 cup)
1 Spanish onion, finely chopped
1 celery stalk, finely chopped
2 garlic cloves, finely chopped
2 tsp ground cumin
2 tsp ground coriander
2 tsp sweet paprika
½ tsp hot paprika
Pinch of ground cinnamon
150 gm canned chopped tomatoes
1.5 litres vegetable or chicken stock
300 gm Persian red lentils (see note)
½ cup (loosely packed) mint
Finely grated rind and juice of 1 lemon
2 beetroot, peeled and thinly sliced on a mandolin
Poached eggs (optional), to serve
Garlic tahini
100 gm tahini
80 gm thick natural yoghurt
1 garlic clove, finely chopped
Juice of 1 lemon
METHOD
Heat 2 tbsp oil in a large saucepan over medium-high heat, add onion, celery and garlic and sauté until tender (4-5 minutes), then stir in spices and cook until fragrant (30 seconds). Add tomato and cook, stirring occasionally, until thickened (1-2 minutes), then add stock and lentils. Bring to the boil, reduce heat to medium and simmer, half-covered with a lid, until lentils are very tender (20-25 minutes).
Meanwhile, for garlic tahini, stir ingredients and 60ml hot water in a bowl to combine, season to taste and set aside.
Heat remaining oil in a small saucepan over medium-high heat, add mint and fry until crisp. Remove with a slotted spoon and drain on paper towels (discard oil).
Half-blend the lentil mixture with a hand-held blender, stir in lemon rind and juice, and season generously to taste. Ladle into serving bowls, add a swirl of garlic tahini, top with beetroot, poached egg and fried mint, and serve hot.
Note: i let mine sit for a day or two to develop flavors, also i added some beet juice to the soup too to give it color and add to taste all ingredients are worth it yummy soup
